Cheap Recipes: Salads
I love salad recipes, because they are very hard to screw up and they allow me to be creative. Here are some of my favorite tasty and cheap recipes:
Healthy Carrot/Garlic Salad Recipe
Shred 3 medium carrots and 3-4 cloves of garlic (if you love garlic like I do and don’t mind the smell, add more). Add half a cup of shredded mozzarella and half a cup of chopped walnuts or pecans. Add mayonnaise. Mix and enjoy.
Cheap and Easy Vegetable Salad Recipe
Cut 1-2 tomatoes, 1-2 medium cucumbers, 1 green pepper and 1 small onion. Add fresh cilantro, salt, 2-3 tablespoons of vinegar and 3-4 tablespoons of oil. We prefer to use virgin olive oil, but sunflower or vegetable oil will work just as well. Mix and enjoy.
One of my Favorite Cheap Recipes: Tasty and Filling Potato Salad
Boil 2-3 large potatoes with skin and 1 large carrot. When the vegetables are done, cool them down, remove the skin from potatoes and cut them and the carrot into small bites.
Hard boil 3 eggs. Cut them and add them to the carrot/potato mix. Add 1 large pickle (cut, of course) and 1 can of sweet peas to your mix.
Add ¼ lb of regular bologna or boiled chicken.
Add mayonnaise, mix. You are done.
